BOATBUILDERS! Can you tell me some quick, easy, and cheap canoe/kayak/small boat designs I can try?

I’m in construction tech. And we have to build a project. And we have about 16 hours of building time.
My family already has a jon boat, but I want something small that I can use a double paddle or a electric thrust motor with a shallow draft. And I got to be able to carry it without a trailer (probably on top of my car). A trailer or internal combustion engine would make this project expensive.
I weigh about 250 pounds and will be using the boat for fishing. So add an extra 15 pounds of fishing gear. I know that seems like a lot of fishing gear, but I’m rounding up.
I came up with a cajun pirogue and I’ll just hack off the tip of the back. Put a half inch triangle of plywood there, so if I wanted to, later on I can mount an electric motor on it later. The problem is that a pirogue would be mostly made with glue and fiberglass tape. That’s just an inconvience when compared to nails or screws.
Anybody got any design suggestions. All I need is a name. Google can find me a design of it. Or an alternate plan to tackling a pirogue.
